Zensai                Mini Hot egg custard served with cod milt and caviar

Sakizuke              Grilled mini rice ball topped with pan-seared foie gras

                           Torched marinated mackerel served with apple and lime zest

                           Deep-fried Hokkaido oyster wrapped with beef Carpaccio

                           served with basil tartar sauce

Wanmono          Deep-fried tofu dumpling served with Kyoto leek and

                          chrysanthemum in ichibandashi

Mukozuke          Spear squid, bonito, tuna, hokki clam

Onmono            Hokkaido abalone and sea urchin in Isoyaki style,

                           served with abalone liver sauce

Shiizakana          Charcoal grilled Kagoshima wagyu beef rump served with

                           taro fries, tom berry tomato and egg yolk miso sauce

Onabe                Charcoal grilled alfonsino hot pot served with tofu, grilled leek

                           and mizuna

Syokuji                Steamed rice with Hokkaido zuwai crab, crab miso

                           and truffle in a Kama pot, flavored with onsen egg sauce

Mizumono         Black sesame sorbet, Nagano purple grape mochi
